Braised Chicken Thighs with Mushrooms & Garlic
Ingredients
- 2 lbs chicken thighs, boneless & skin removed
- 4tbs olive oil
- 1 cup sliced mushrooms (white or portabella)
- 8 peeled & crushed garlic cloves
- 1 clove minced garlic
- 2 tbsp fresh thyme, or 1 tsp dried
- 3/4 cup heavy cream (or coconut cream if trying to avoid dairy)
- Salt & pepper, to taste
Directions
- Preheat oven to 325 degrees
- Heat 2 tbsp of olive oil over medium-high heat in a cast iron braiser
- Add mushrooms and sauté until cooked 75%
- Remove mushrooms and set aside in separate bowl
- Pat chicken dry and season with salt & pepper to taste
- Heat 2 tbsp of olive oil over medium-high heat
- Lightly brown chicken on both sides
- Remove from heat and add back mushrooms
- Distribute garlic cloves, minced garlic, and thyme evenly over chicken
- Add cream
- Cover and cook for 35 minutes. Bon appetite!
